using 2015 5k imac:
1. there way in real time check transfer speeds of thunderbolt 2 device or usb 3.1 device when transfer files?
2. apple website indicates tb2 transfers @ 20gb/s , usb 3.1 transfers @ 10gb/s. these realistic speeds when using proper cables? should transfer rates around these speeds or change?
3. besides price , fact there more usb 3 devices, there reasons use usb3 cable vs. tb2 if given option?

depends you're transferring , you're transferring to. if you're copying external hdd bottleneck limited hdd i/o. if you're transferring 100s of little files, might take longer 1 big file.
overall transfer speed cited theoretical maximum throughput, won't ever hit speeds 100% saturation. there many elements cause speeds fluctuate; content, cable, drive you're copying from, drive you're writing to, resource usage on system, saturn's alignment jupiter, lot.
speeds should be pretty quick on either usb 3.1 or tb2. it's unlikely you'll find twiddling thumbs waiting stuff copy, put way.
tl;dr: don't worry , use whichever interface suits best.
