@dannyt2011 pointed out can in fact turn on hdr when want! rather relying on 'auto' setting have 0 control on when kick in!
turn off 'auto hdr' in camera settings, found in 'settings.'
then, have 'hdr' reappear @ top of camera app, per normal. touch word 'hdr' , given 3 choices there, 'auto/on/off.' select option want use.

quick test of iphone 8 plus in regards of camera.
deliberately chose tricky subject wide dynamic range (lots of darker , lighter details) see how fared , how smart inbuilt hdr feature is. unfortunately, hdr didn't kick in , there no option turn on either! it's purely automatic thing if or won't kick in you.
took first image using inbuilt camera app portrait mode turned on , set natural, exported image jpeg. made inbuilt camera expose highlights on iris's pistil, white , yellow , made lock exposure took shot. can seen, didn't cope highlights presented here, there's little detail there , in other sections of flower whites present.
took second image using app called pureshot, allows manual control of camera, using spot metering on whites, selecting wanted focus be, underexposing stop , exporting image raw file. pureshot not have portrait mode background blurring, background here lens sees. there's lot more detail one, both in darker , lighter regions, gives indication of camera capable of.
1 peculiarity noticed, had focus further when using pureshot app reason, though both shots taken using wide-angled lens.
quick , easy test, i'm pretty pleased results, when compared old iphone 6 capable of. it's still miles off of using dslr, mobile phone camera, it's pretty damn good! i'm yet experiment portrait modes on people, others have chance use willing models , share results here, family have said emphatic "no's" being test subjects me!
